 not suitable for real stir-fry dishes June 24, 2004

I owned 2 circulon stir-fry woks in less than 4 years. I understand that I can only use the wok for low or medium heat cooking. But sometimes it is a must to use high heat cooking for stir-frying authentic Chinese dishes where high temperature and short cooking time are required. I discovered that after high temperature cooking, the non-stick coating of the wok would be damaged gradually, starting with discolouration and followed by peeling off of the coating. That was the reason the life spans of my two Circulon woks lasts less than 2 years each.
Overall speaking, the Circulon wok is good only for pan frying at low heat (frying fish and omlettes are OK). It is absolutely unsuitable for stir-frying real Chinese dishes. I think the retail price for a Circulon is not really worth for a wok which can only last for two years.

This is an amazing wok / frying pan. It is so versatile you can cook almost anything in it - from thai curry to omelettes and pancakes to a whole cooked breakfast! We have had ours for over 3 years now and it is still as good as new - nothing ever sticks despite a few cooking disasters!

I have owned the stirfry pan for 6 months and it have used it endlessly. The pan takes a little longer than most to heat up but provides an excellent non-stick cooking surface. I have used the pan to create endless thai and cantonese dishes using vegatables, meats, and fish. After use the stirfry pan is easily cleaned using soapy water. A first rate cooking utensil, very highly recommended.

I have used this item extensively for the past 2 years.
The surface is truly non-stick, and it is impossible to burn food on to the surface. requiring a lot of elbow grease to remove it. The non-stick surface is still as good as new even after regular use.
Stir frying is a dream - the design is such that you can toss the food as expertly as any of the chefs seen on the TV.Iwould recommend anybody to buythis or any other Circulon item
